I adopted a pit pup that was dumped in a parking lot. The vet says he was around 4 weeks on 11-3-08 when he was found and he weighed 4.8 pounds. Now at 7 weeks and 4 days he is 6.4 pounds. Is this a normal weight or was the vet off on the age. I trust the vet but maybe he was off a little because my pup seems so small.

I'm not sure if you've typed it wrong, or calculated it wrong, but if he was 4 weeks old on 11.03.08 he's now not quite 6 weeks old (11.14.08)
At that age, his weight is okay. It's easier to judge by looks, than by weight. If you can count all his ribs just by looking, and he doesn't have a layer of 'puppy fat' all over, then he's probably underweight. If he was neglected and abandoned, that wouldn't be surprising.
He may also have worms which can make a puppy anemic and prevent him from getting the nutrition out of his food. Your vet will be able to deworm him for you if he hasn't done so already.
Pitbulls are muscular dogs when adult, but there's a big variation in size between the different 'types' of Pitbull and even within a certain litter, some puppies will naturally be smaller (or bigger) than their siblings.
